Bobby-Q opened in 2005 on 27th Avenue in Phoenix, in the space that had been The Original Bobby McGee's, and the man behind it was Bob Sikora, a Phoenix native and veteran restaurateur who had opened places from Arizona to Hawaii before firing up his first slow smoker here. The address today is 8501 N 27th Avenue.
Smoke and rub
The barbecue is slow-cooked over wood with a house dry rub, an approach credited to executive chef Mark Hittle, and the menu centers on hand-pulled pork, smoky sausage links, fork-tender brisket and ribs that fall off the bone. Three styles of ribs are on offer: St. Louis, baby back and Texas beef, so a table can compare them. Chicken, salmon and burgers cover non-rib orders, and hand-cut steaks account for the steakhouse half of the name.
